In the second step, the L-dopa formed by tyrosine hydroxylation is quickly decarboxylated by another enzyme called aromatic L-amino acid decarboxylase (AADC), to the neurotransmitter dopamine.
That, along with it containing tyrosine, an amino acid that aids neurotransmitter production, may make it hard to get some rest if you have a bunch of protein before bed.
Aldolase A is made of 350 amino acids, the building blocks of proteins, but the bit that does the work consists of only three of these: lysine, glutamic acid and tyrosine. The rest of the enzyme is packaging.
