It is getting warmer and the weather is getting nicer. In Beijing, hopefully we won't have any more sandstorms. Now for a foody and amateur cook like me, this is one of the best time of the year, because in Beijing, now is the time for restaurants and bars to start having outdoor and rooftop sitting.

There is nothing better than sitting outside, enjoying the breeze and sunshine while having a leisurely meal with your friends and family, especially after a long and stressful week.

So,yes, this episode is going to be about food.


And more specifically, it's an episode about brunch.今天的酒馆里就让资深吃货加业余厨子的璐璐陪你聊聊brunch.

If your English is up to date, you have definitely heard of the word brunch before. B-R-U-N-C-H Brunch. It is a combination of breakfast and lunch.

在中文里有时候会把它翻译成早午餐,听起来就有点怪怪的.

But trust me, people who actually go to brunch will never really call it by the translation. They will always call it brunch, even when they're speaking Chinese.

Now we said brunch is a combination of breakfast and lunch. Think of it more as a late breakfast or early lunch. For many Chinese, the concept of brunch seems to be quite new.

It has only been around perhaps for a decade or so. However, the actual word brunch first appeared towards the end of the 19th century, born from the British upper class.

其实brunch这个词和这个概念早在19世纪末的英国上流社会就已经出现了。


Back then, on Sundays, wealthy families would give their servants a day off after getting these servants to prepare a huge meal which these wealthy families could then eat from for the rest of the day.

They would spend the whole Sunday eating around the banquet table, enjoying delicious food, finest alcohol, and spent time just talking over the events of the week.


Nowadays, the brunch is usually associated with the weekend, Saturday and Sunday. The idea is people usually sleep a little longer and when they wake up, they're gonna meet up with friends or family to have a meal perhaps around 10 or 11.

Although nowadays restaurants that actually serve brunch, they will serve them for quite a long period of time, maybe starting from 10am all the way to 2pm or even 3pm, and they will just call it brunch.

Nowadays in china, especially in first tier cities like Beijing or Shanghai, there are so many restaurants that serve brunch. Some of them are trying to appeal to the health-conscious crowds.

So they would create all these social media friendly, healthy smoothies, vegetarian bowls, salads and super foods.

But then you also have some other restaurants, they are offering a really hearty unhealthy brunch usually high in calory, high in fat just to help you get over a hangover from the previous night.


所以brunch一般是进可攻退可守,既可以是那种网红超级食物、健康小清新的菜式,也可以是满盘的卡路里来解你头一天晚上的宿醉。

Either way they will cater to your taste.

Speaking of a typical brunch, they usually offer both sweet and savory. We're not gonna talk about the basics like pancakes, French toast, waffles, or omelet.

Instead, we're going to focus on a few more special brunch items, especially those who have become more popular over the past few years in China as well.


First of all, let's start with a sweet treat the French Crepe,法国的可丽饼。

We talked about this in one of the earlier food episode, a Crepe, C-R-E-P-E, is basically法式煎饼.It's a very thin pancake.

But unlike our Jianbing, which is almost always savory, crepe is sweet. They are served with a variety of feelings, including all sorts of fruits, cream, sauces, chocolate, you name it.

If you don't like sweet, that's fine. Because crepe actually offers a savory alternative called Galette.

法式的煎饼,除了可丽饼这种甜食之外,还有一个近亲叫做Galette,也是法式煎饼,只不过它是咸的。


This is made from buckwheat flour, they're also thin pancakes. You usually put cheese, a slice of ham and egg as the filling. If you go to some of the popular brunch places in China, I can guarantee you, you will see both Crepe and Galette.

Moving on to another thing made with flour, also very popular brunch choice, this is Bagel.中文把它翻译成贝果。

It's basically like a piece of bread, but it's ring shaped with a hole in the middle. Some people when they see bagel for the first time, they would ask how is this different from a donut?有人就问贝果和甜甜圈有什么区别?

First of all, the taste is completely different. Donuts, they are much softer, they're more like cakes;Bagels are a lot harder, they are like bread.

You have to put it in water to glaze it first and then bake it.做贝果的时候通常要先在水里煮,这样让它上糖色,之后再放进烤箱烤。

The bagel used to be a special kind of Jewish food. They're eating usually for breakfast or as a snack. But nowadays they are also a popular brunch item.

At brunch table, they are usually cut in half. They can be used more like sandwich bread. So you can put things in the middle like cream cheese, vegetables or all sorts of meat to make a bagel sandwich. If you're making it right, they can actually be relatively healthy.


The next item is definitely a brunch celebrity. Wherever you go in the world, as long as you are having brunch, chances are you're going to see this item. This is Eggs Benedict.中文就把它直译为班尼迪克蛋。

I think for the first timers, if you look at the name Eggs Benedict, you have no idea what you're getting. There are many different versions about the origin of the name, but roughly it's someone named Benedict, and he invented this recipe and then it's called Eggs Benedict.

It's like if I invent a recipe in the future, they're going to call it Eggs Lulu.

So Eggs Benedict, it’s kind of like an open sandwich. 班尼迪克蛋有点像一个开放式的三明治.You have half of an English muffin, 它的底座是被一切为二的一半英式麦芬.


English muffin就有点像麦当劳里面麦满分的面包.

On top of it, you put bacon, maybe some vegetables and a poached egg.就是所谓的水波蛋,其实更接地气一点来说,基本就是荷包蛋.And very importantly, on top of it, you put hollandaise sauce.

Hollandaise sauce is made from egg yolk, melted butter and lemon juice. This is one of the most important sources in French cooking.

要做好正宗的班尼迪克蛋,最上面要浇一种叫 hollandaise sauce,荷兰酱的酱汁,它是法国菜五大mother sauces,母酱之一,也就是最基础最常用的酱。个人觉得 “mother sauce”母酱的概念非常的有感觉,Mother of all sauces.

And this hollandaise sauce is a perfect combination of salty, sour and creamy, but trust me, if you try to make it at home, it's very difficult to make perfect hollandaise sauce.

I've failed so many times before I got it right. Now if Crepe, Galette, Bagel, Eggs Benedict are some of the staples of brunch menu. I have two more for you that are perhaps even newer. If you know them, next time when you go to a brunch, you might be able to show off your knowledge.

So the next one is something called Shakshuka. You know it's not English. In Chinese, we sometimes call it North African egg,北非蛋。

有的餐厅为了保持异国风情,也会直接用音译把它翻译成什么莎克苏卡这样的名字.


Despite the name, it's actually a very, very easy dish. This is a recipe from Israel and other parts of the Middle East and North Africa. It's a simple combination of simmering tomatoes, onions, garlic, lots of spices.

After you cook all of these, you put an egg in the middle and simmer it for a bit until it's gently poached.

Shakshuka其实就是把一些简单的蔬菜切成小丁,放在锅里炒,加上很多的香料,最后再在中间打入一颗鸡蛋.

It's very flavorful, healthy as well. And on top of this, it's also a good way to use some of the leftover vegetables.


Now another rising star in the brunch world is something called Poke. P-O-K-E, it's not pronounced poke because Poke is from the native language in Hawaii,夏威夷盖饭, Poke.

This word originally means slice or cut in Hawaiian. It's basically just chunks of raw marinated or seasoned fish. Things like tuna or maybe salmon over rice or seaweed. You might also put things like sea salt, sesame seeds, or even soy sauce to enhance the flavor.


The recent Poke has been trending, I think it's because it's quite healthy, it's essentially a salad. So for those of you who are really health conscious, don't forget to check it out.

We talked about all these brunch items, but one of the interesting things about brunch is that although people have it in the morning, it is usually accompanied was alcohol.

If you drink in the morning, most people would think you have a problem. But if you drink at brunch, people would think it is perfectly natural.

But people don't really drink hard core drinks.

The most quintessential brunch drink is something called Mimosa.中文把这种brunch专用鸡尾酒翻译成含羞草。

Mimosas are just sparkling wine with orange juice. This is for people who like to drink with their meal and generally just want to have some alcohol to relax over a leisurely brunch.

But for those people who drank too much the previous night and trying to cope with a hangover, there is always bloody Mary.

不过对于那些头一天就已经喝大了, brunch期间还在宿醉的人来说,必点款一般就是这款叫血腥玛丽的鸡尾酒.


It's vodka, tomato juice, spices, lemon juice, olives and celery. Fight fire with fire, fight alcohol with alcohol.
