We saw last episode how Aegon loved his son Jaehaerys.
So in his fury and grief, Aegon smashes the model city that his father Viserys made.
Viserys loved this model, it's a symbol of the history of their dynasty, so for Aegon to smash it... it's like he's destroying his own realm.
Maybe Aegon is jealous that Viserys spent so much time with this model, but didn't spend much time with him, his son.
Aegon shouts "I am the king".
